I assume you are aware of the fingernail trick? You use the tip of your fingernail on the screen, not the fleshy part of your finger. The screen is extrememly sensitive and responsive in that mode. I also have experience with capacitive screens and would find them much too sensitive in flight when you're bouncing around...any micromovement when touching would throw the screen into chaos.
