I've noticed that the Windows version has NMEA out capability, and I'm just wondering if by using a USB to serial converter on an Android tablet that it would allow the same?

This functionality on Windows is currently untested, and so my default guess is that it does not work.  But I'd be pleasantly surprised if it did work.

Would you (or anyone else?) like to test it out and tell us the results?

Will do.  I"m not sure when, but I'll give it a shot.  Is there a standard or fixed serial port you use for that output?

I'm not sure which COM port it'll default to.   But if you select "Setup => NMEA Output" , does it simply say "No ports found..." or does it show you a menu with options?
