I'm sure this has been discussed before but I was wondering what is the most readable tablet in the cockpit? I currently have an iPad mini and it gets washed out pretty easily.

The dedicated iFly 740 device will outperform most (all?) tablets on the market in terms of brightness.  For comparison, the iPad Mini 4 has a brightness of 450 nits, while the 740b has a brightness of 1100 nits.

Some folks have had good results with fashioning a "hood" for their tablet to shade the screen and reduce glare and reflections, using materials like thin opaque plastic or light cardboard.  Wearing dark shirts has also been helpful for some.

That will depend heavily on the tablet, as well as its orientation.  Many LCD displays are themselves polarized, such that when viewed through polarized sunglasses, they look fine in portrait orientation but then go completely black when rotated 90 degrees to landscape, or vice-versa.

My panel-mounted GPS is somehow polarized on a diagonal, so that it's always somewhat dim unless I tilt my head when I look at it, and I used to have a device that was unreadable in the portrait orientation I preferred.  Because of those issues, I don't use polarized lenses in my plane.
