I flew with this thing for the first time the other day. It worked very well. I was surprised at how well it worked.

Is the AHRS feature dependent on a GPS signal?

The AHRS is still a work-in-process on the Stratux side; therefore it is not recognized by iFly. However, it seems to be accurate when viewed in flight on the Stratux web page, so it may not be too long before it works with iFly. I believe the AHRS is independent of a GPS signal, but there's much discussion on the Stratux site about whether the AHRS should get its heading info from the GPS or the magnetic heading chip. Apparently the devil lives in those details and even certified units don't have a consensus on heading source.

The key thing I am interested in is where the attitude reference comes from. The Dynon D1/D2 get their attitude information from GPS computations. If you lose the GPS signal you lose the attitude indicator completely. iLevel uses electronic 3-axis gyros so the attitude information is not dependent on the GPS signal.

Regarding heading source, make it user configurable. Pick one, end of problem.

Google the RY835AI to see its capabilities. Read the following link to see why it's not as easy as "make it user configurable":
