Does the 740 drive the autopilot servos directly, or will I need a head unit?

The 740 does not drive the autopilot servos. It sends the data to the autopilot system. The common autopilots for an RV are the Trio Pro Pilot and the Tru Trak. They both have a panel mount head unit that receives the 740 (or any other gps) data. That head unit controls the servos.

Or in my case it feeds a Dynon D10A which in turn drives the servos.
