Will the iFly software for both dedicated (720/740) and tablets be compatible with the Stratux AHRS?

It already is. The latest version of Stratux includes a "psuedo" AHRS based solely on GPS. Don't bet your life on it, but I flew with it today and it worked fine during normal maneuvers. It goes wonky if the GPS signal is lost briefly, but that's to be expected.
