I'm on the verge of having the Aspen VFR pfd and mfd500 installed, along with the L3 Lynx adsb transponder.

I'd also like to panel mount the Ifly740.

Will the Aspen units read a flight plan from the 740?

The iFly can export a flight plan via NMEA serial data feed.  Most EFIS systems will work with that data and update the flight plan.

If I understand correctly, if the 740 export data, then I should be able to use it ( with the right cable) to run the Ifly software on my window 10 Tablet?

and if so how ?

You should be able to export NMEA data from the 740 to your Windows tablet, and the Windows iFly will use it as a GPS for position information.  However the iFly for Windows won't receive the 740 flight plan in this manner.  This is one for the wishlist, though.

Is it microsoft doing, that prevent this to happen, as I am seriously considering dropping them for Apple
