I figured out what happened. I was simulating and the little simulator control box covered up my "Plates" buttton.

I too like the idea of zooming in and out with the +/- buttons, because I know I can return to the original view when I'm finished doing what I zoomed to do.

New episode today.  I had a simple flight plan A to B with an approach selected.  Not sure if it was via Plates button but I had the approach plate overlaying the map.  Then I decided to change destination, so I removed first the approach, then the destination airport from the flight plan.  When I returned to the map view the plate was still showing.  I clicked the Plates button and opened the menu but there was no choice to hide the plate.  If I can get this to a repeatable state I'll do a bug report.

I think it's working as designed. Just hide plate, delete the destination, add new destination, plate should be gone.

EDIT: I was also able to do it by removing procedure from flight plan, delete the destination, add new destination, plate was gone.

This is on a Surface Pro 4, Windows 10.

Sounds like your map screen did not refresh for some reason.

If iFly allows a plate to be orphaned as a map overlay with no way to turn it off, then we can discuss whether it's a "bug" or a "poor design", but hopefully we all agree that it's undesired behavior and should be corrected.
