Worst case out in the open, a GPS can take 2 hours or more to get it's first fix.  Or, it might be a faulty unit.

Some follow-up:

I left the VK-162 powered with a clear view of the sky for several hours (as Jeff suggested).  There was still no improvement.  When I contacted the vendor, their impression was that the unit was possibly defective and immediately offered to send a replacement.

Some of the Stratux vendors are extremely generous with their return policies, knowing that budget parts sometimes arrive DOA.  I've been lucky so far personally, but I've seen where vendors who monitor the Stratux forums on Slack and Reddit will jump in unannounced and ship a new part to someone who posted an issue such as yours.  They're pilots just like us and I'm happy to do business with them.  Hopefully your replacement part will be up to snuff.

The replacement VK-162 arrived today as promised  and I plugged it into the Stratux.  It almost immediately was tracking multiple satellites and reporting 4.6m resolution ... and this was still inside the hangar!  The iFly 740's GPS status instrument reported "ADSB" beside the GPS reception scale, so it appears all is good!
