I haven't used a dedicated iFly device in a long time, and am not sure if the user interface has changed, but I'm confused when you say "you have maps/data for 12 states", but then talk about selecting data from the list on the 740b.
iFly is almost identical in look-and-feel across all the platforms it runs on, but there is (or at least used to be) a big difference in how the dedicated iFly device data update process works vs. how it works on Android, iOS, and Windows.
On a tablet or PC device, the update data selection is managed graphically by tapping on a CONUS map to (de)seelct individual states (which iFly translates behind-the-scenes into all the proper sectionals, RealView imagery, airport data from the Chart Supplement, etc. required to cover those states).
However, on the dedicated devices like the 740b you are presented with all of the FAA chart and data products individually in a textual list of product names. Instead of just tapping a picture of Texas, you have to go manually select the Houston sectional, Memphis sectional, Albuquerque sectional, San Antoinio sectional, IFR Low Enroute Charts 21 and 22, etc. Once you select the set of data you want, I think there's a button you can click or checkbox you can select to "save current selections", so when you do more updates in the future it will always grab that same set of data.
You can perform 740b data updates within iFly while the device is connected to the Internet, or you can pop out the device's SD card and move it to a Windows machine and use iFly Connect as I mentioned in a previous reply. You can also go to the iFly website and use the "Builselect the data you want via the iFly website, then download it to a USB stick and plug that into your device prior to booting, and it will pick up the updates during the boot process.
